Paula learned a new cooking trick we thought we would share! With her summer herb garden growing like crazy, Paula decided she would freeze some of her herbs this year to savor them all year long.
The results are these neat herb & olive oil cubes. Wondering how we’ve been using them? Well, just throw one into a hot skillet, and let the cube melt. While the oil warms, the herbs infuse the oil, leaving a delicious fresh flavor.
We’ve had good results making a simple summery sauce by combining halved cherry tomatoes with the hot herb oil in a skillet, stirring together over medium heat until saucy, then tossing through with spaghetti. We’re licking our lips just thinking about it!

Step 1: Gather your materials. For this project you’ll need a mess of fresh herbs (we used a combination of rosemary, tarragon, thyme, sage, and parsley), olive oil, and an ice cube tray.
Step 2: Roughly chop the herbs.
Step 3: Fill each ice cube compartment halfway with herbs.
Step 4: Cover the herbs with olive oil.
Step 5: Freeze until solid, then remove the cubes from the ice cube tray, and place in dated freezer bags and place back into the freezer until ready to use.
