Mixed Mushroom Rice

Ingredients

  • 3 cups chopped mixed (white, portobello, shiitake, etc.) mushrooms
  • 1 medium diced onion
  • 1/2 stick butter
  • 5 cups cooked white rice
  • 1/2 cup sliced green onions
  • to taste soy sauce

Directions

Sauté the mushrooms and onion in butter in a skillet until soft. Stir in rice, soy sauce, salt and pepper, and green onions. Cook until warmed through.
