- 1/2 cup butter, softened
- 2 tablespoons fresh cilantro, chopped
- zest of 1 lime,
- 1 chipotle pepper in adobo sauce, minced
Stir together all ingredients in a small bowl. Place on a piece of parchment paper or plastic wrap and roll into a 1 ½- to 2-inch log. Wrap and refrigerate until ready to use. Cut into ¼-inch-thick slices to serve.
Perfect Pairings: This is the perfect summertime butter. Brush on corn on the cob, grilled chicken, pork, or shrimp. Or, season your favorite grilled or roasted vegetables, add add some pizazz to rice or other grains.
