Brown Sugar Salmon

Ingredients

  • 2 large salmon filets
  • seasoning salt, to taste
  • brown sugar, to taste, divided
  • large sweet onion, cut into rings
  • ¼ stick butter

Directions

Preheat oven to 350˚F.

Spray a 13 x 9 casserole dish with nonstick cooking spray.

Season filets with seasoning salt and arrange in casserole dish. Sprinkle a layer of brown sugar over the top. Pile the onion over the top—it should be a few inches thick. Add a generous second layer of brown sugar, then dot the top with the butter.

Bake for 40 to 45 minutes. After the first 30 minutes, start basting the fish with the melted butter and brown sugar to help melt the rest of the brown sugar still on the fish.

Serve with white rice and peas, ladling the extra brown sugar sauce over the rice.
