How to Make Citrus Summer Ice Cubes

It’s time to beat the heat! Cool off and stay hydrated when you try the Test Kitchen’s outrageously citrusy ice cubes. You’ll be refreshed and rejuvenated in no time (with a drink that wont be watered down)!

Step 1: Gather your ingredients together. We’re using a mix of orange, lemon, and lime juice along with some sliced kumquats and fresh mint.

Step 2: Use freshly squeezed juice for the best and brightest citrus flavor.

Step 3: For the prettiest presentation thinly slice the kumquats before adding to the ice cube tray. If you can’t find kumquats you can also thinly slice lemon or limes sliced into quarters so they fit into the ice cube trays or raspberries would also look nice.

Step 4: Add fresh mint to the ice cube tray. We’ve also enjoyed the ice cubes with basil for a more adventurous flavor combination. Be sure to tear the herbs rather than slice so the leaves wont bruise and turn brown.

Step 5: Fill up the tray with the freshly squeezed juice and freeze until solid.

Enjoy the ice cubes in a tall glass with some chilled white wine topped with seltzer for the ultimate citrusy wine spritzer, or use to revitalize some plain sparkling water with a hint of citrusy sweetness!

 

Citrusy Summer Ice Cubes

16 sliced kumquats
12 mint leaves, torn
¾ cup fresh squeezed orange juice
¼ cup fresh squeezed lemon juice
¼ cup fresh squeezed lime juice

Divide the mint leaves and kumquats into each ice cube compartment of the tray. Add the orange juice, lemon juice, and lime juice to a 2 cup glass measuring cup and combine. Add to the ice cube tray and Freeze until solid, at least 4 hours.

Makes 1 tray of ice cubes
