How to Make Chocolate Chip Brownie Bars

If you’re looking for a delicious treat to bring to a potluck, to raise money at a school bake sale, or to enjoy just because, we’ve got just the recipe for you—Paula’s incredible Chocolate Chip Brownie Bars! It’s a combination of two of our favorite classic baked goods, and, if you ask us, it’s the mash-up we all need.

We know that making just cookies or just brownies can seem intimidating enough, but it’s less work than cookies (no cookie dough scooping) and just barely more work than brownies (a little extra stirring & measuring). We thought we’d share an easy how-to, so you can see for yourself just how easy (and delicious!) they really are.

First, gather your ingredients:

  • nonstick cooking spray
  • 1 cup softened butter
  • 1 ½ cups firmly packed brown sugar
  • 4 large eggs
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup semisweet chocolate morsels
  • 1 (18.4 oz) box brownie mix
  • ⅓ cup vegetable oil
  • ¼ cup water

Next, grab your tools. You’ll need the following:

  • 13 x 9-inch baking pan
  • aluminum foil
  • 2 large bowls
  • medium bowl
  • electric mixer
  • knife

While your oven is preheating to 350 °F, line a 13-by-9-inch baking pan with heavy-duty aluminum foil, leaving a 2-inch overhang. Spray the foil with nonstick cooking spray.

In a large bowl, beat the butter and brown sugar at medium-high speed with your electric mixer until the mixture is fluffy. Add 2 of the eggs, beating them until they’re well blended. In the medium bowl, combine the flour, baking soda, and salt, then gradually add the flour mixture to the butter mixture, beating it until the mixture forms a soft dough. Now, stir in the chocolate morsels.

In the other large bowl, combine the brownie mix with the oil, ¼ cup water, and the remaining 2 eggs, beating until it’s well blended.

Spread the cookie dough in the prepared baking pan, then pour the brownie batter over the dough. Using a knife, swirl the mixtures together, then bake it all for about 40 minutes, or until the edges start to pull away from sides of the pan. Let your fresh-baked goodies cool in the pan for an hour, then cover and refrigerate them for 4 hours. Cut them into bars before serving.
