Rootin’ Tootin’ Rhubarb

If there’s one piece of produce that just doesn’t get enough credit, it’s rhubarb! This vegetable—yes, despite the fact that it’s most famously cooked in pies, it is a vegetable—looks an awful lot like celery, though with bright red stalks and a leafy green top.

This veggie has a naturally tart flavor and is often sweetened with sugar. And again, while you may have tried it in pie before, we’ve found there are plenty more uses for it! It pairs beautifully with chicken and onions, it makes for one yummy salad dressing, and it can even be pickled for a totally different take. It seems there’s very little it can’t do. Enjoy!
